    1-1/2 lbs. haddock fillets
    1 cup honey & oats variety granola cereal
    1 sleeve of wheat Ritz crackers
    6 tbsp butter, melted
    Juice from fresh lemon

    Recipe



    1. Preheat oven to 350 degrees. Spray a 9x13 inch glass pan with a canola baking spray.
    2. Squeeze half the juice from lemon over the haddock.
    3. Place granola and crackers in a heavy plastic bag.
    4. With a rolling pin, crush crackers & granola until finely ground.
    5. Place crumbs in a bowl. Pour butter over them and mix well.
    6. Cover the haddock fillets with the crumb mixture.
    7. Cover with foil and bake for 20 to 25 min. Uncover and bake for 5 more minutes. Fish will flake easily with a fork when done.
