Halibut with Garlic Crust

YIELD 1 Order
1 Tbsp Canola Oil
½ Tsp. Salt
½ Tsp. Black Pepper
8 oz Halibut
As need Garlic Crust
4 oz. Lemon Water
1 Blackened Potato Slice
2 Tsp. Steak Butter
2 Tbsp Lemon Butter
Fresh Chopped Parsley
1 Lemon Wrap
TO COOK
Step 1 Remove hot pie tin from oven. Drizzle oil in pan
Step 2 Season both sides of fish with salt and pepper. Place garlic crust over the fish and
spread evenly over the surface making sure the crust have a ¼" inch thickness.
Place fish into oiled pie tin and shake to loosen fish. Ladle in lemon water. Place
into a 450-f oven and cook for 11-12 minutes. (Fish should have an internal
temperature of 135-140 degrees.)
Step 3 While fish is cooking, remove prep potato slice from the reach-in. Clean the
broiler top and drizzle 2 tsp. of streak butter on top of broiler. Place sliced potato
on top of the broiler and cook for 2 minutes. Flip potato over and cook for 2 more
minutes. If potato is done before the fish place on an inverted sheet pan on top of
broiler until needed.
