    King George Whiting in Beer Batter

    1.5 kg fresh King George Whiting fillets
    1 can beer
    2 cups self-raising flour
    3 eggs
    1/2 tsp salt
    Pinch of white pepper
    milk
    Lemon wedges
    Oil for frying

    Recipe



    Briefly beat the eggs and mix with the flour, salt, pepper and enough milk to
    form a fairly stiff batter. Leave to stand one hour if possible. Then mix in
    enough beer to make a thin batter. Heat the oil until it just bubbles after a
    test drop of batter, dip the whiting fillets into the batter, then drop into
    the hot oil until golden brown. Remove, drain on thick paper and serve with
    lemon wedges.
