LOBSTER CREPES

Amounts to taste
Olive Oil
Leeks & Shallots
Sherry
Sauté leeks & shallots in olive oil until transparent, add sherry
Cook until flavors marry and reduce. Add lobster meat, Strain and save liquid
Sauté de glaze
Add
Heavy cream
Mascarpone
Cream cheese
Cook down until creamy at low heat
Add to leeks & shallots mixture
Cook down at low heat
Add in liquid that had been strained
Sauce
Corn Starch
Gouda Mornay
Cream Cheese
Mix together until creamy and add on top of each crepe
Crepes
Fill crepes with mixture, add sauce and serve
