    Mango And Papaya Salsa
    7 1/2 oz. mangos
    7 1/2 oz. papayas
    5 oz. Red bell peppers
    1 1/2 ounces Anaheim chili pepper
    1 1/2 ounces jalapeno peppers
    1 1/2 ounces red onion
    1/4 cup lime juice
    1/4 ounce cilantro, fresh, chopped
    1/4 tablespoon honey
    Kosher salt, to taste

    Marinated Catfish Tacos

    5/8 cup canola olive oil blend
    2 1/2 teaspoons cumin
    2 1/2 teaspoons coriander
    2 1/2 teaspoons minced garlic
    7 1/2 tablespoons lime juice
    7 1/2 teaspoons chili powder
    1/3 teaspoon kosher salt
    2 1/2 pounds catfish filets
    10 each 8 inch flour tortilla
    1 1/16 heads romaine lettuce

    Chipotle Cream Sauce
    1/8 cup lite mayonnaise
    1/8 cup plain yogurt
    1/4 teaspoon lime juice
    1/8 teaspoon chipotle chile pepper, ground
    1/16 teaspoon ground cumin
    dash kosher salt
