    Market Street Crab-Stuffed Halibut

    Market Street Crab-Stuffed Halibut
    Serves 4

    Halibut Ingredients:
    4 (8-oz) fresh Alaska halibut filets
    1 cup flour
    4 whole eggs, beaten
    4 oz butter or margarine

    Halibut Method:
    Dip halibut filets in eggs, then dredge in flour.

    Heat butter or margarine in non-stick skillet over medium-high heat. Add halibut filets and cook 4 minutes per side, or until done. Remove from heat.

    Stuffing:
    2 TBSP butter
    ½ yellow onion, cut into ¼" dice
    ½ cup heavy whipping cream
    2 lbs crab meat
    ½ cup bread crumbs
    2 eggs
    1 TBSP Coleman's dry mustard
    ¼ tsp cayenne pepper
    1 TBSP paprika
    1 TBSP salt
    2 TBSP fresh parsley, chopped

    Stuffing Method:
    Sauté onions in butter until clear, approximately 4 minutes. Mix together all remaining ingredients and add the sautéed onions.

    Final Preparation:
    Place 4 tablespoons of the stuffing on top of each halibut file. Place under the broiler in your oven and broil for approximately 5 minutes until brown.
