16 oz. frozen codfish fillet
1/4 tsp. salt
Dash of pepper
1 medium tomato, peeled and sliced
1 tsp. sliced green onion (more if desired)
2 tbsp. margarine
1 tbsp. lime or lemon juice
1 tbsp, dry cherry (optional)
1 tbsp. fresh parsley (optional")
Recipe
Thaw fillet; arrange fillet in shallow pan greased with margarine. Sprinkle
light with salt and pepper. Add layer of tomato and onion. Mix margarine,
juice, sherry; pour over fish. Bake, uncovered, for 30 minutes at 350° or
until fish is flaky. Serve on warm platter. Garnish with parsley. Serves 4.
