    Oven-Roasted Fish Dinner

    1/2 c. Bisquick baking mix
    1/2 c. yellow cornmeal
    1 t. dried oregano leaves
    1/2 t. salt
    1 to 1 1/2 lbs. fish fillets
    1/2 c. plain fat-free yogurt
    1 medium zucchini, cut into 1-inch pieces (1 1/2 cups)
    1 medium red onion, cut into wedges
    1 medium red bell pepper, cut into 8 pieces
    1 Tbsp. olive or vegetable oil
    1/2 t. lemon pepper seasoning


    Recipe



    Heat oven to 450 degrees. Spray 15x10x1-inch jelly roll pan with cooking spray.

    Mix baking mix, cornmeal, orgeano and salt.

    Dip fish in yogurt, then coat with baking mix mixture. Place in one side of pan.

    Toss remaining ingredients; spoon into other side of pan.

    Bake, uncovered, 18 to 22 minutes or until vegetables are crisp-tender and fish flakes easily with fork.

    Calories: 270 per serving

    *NOTE: You may choose other vegetables such as eggplant, carrots and yellow summer squash.
