Pan-fried Fresh Whiting

chilies, chopped
fresh herbs
olive oil
6 medium, fresh whole whiting
wholemeal flour
butter
lemon juice
parsley
Recipe
Marinate chilies and herbs in olive oil. Wash and clean whiting thoroughly.
Dust with flour. (Place flour and fish together in a plastic bag and shake.)
Heat together in pan, butter and olive oil in which herbs and chilies are
marinating. Add whiting and fry, turning once and squeezing lemon juice on
either side. When golden brown and just cooked through (about 10 minutes),
remove from pan and serve decorated with parsley. Serves 6
