    Crunchy pretzel crumbs coat the mustard-flavored fish for a wonderful
    combination. Adapted from Better Homes & Gardens.


    List of Ingredients




    1/4 cup all-purpose flour
    1 egg, beaten
    3 tablespoons mustard (your favorite; I like 2 T. yellow & 1 T. Dijon)
    1 tablespoon milk
    1/4 teaspoon pepper
    1 1/2 cups coarse pretzel crumbs (about 6 ounces pretzels)
    1 pound thin fish fillets (flounder, catfish, etc.) oil for frying

    Recipe



    Place flour on a plate. Mix egg, mustard, milk and pepper in a shallow
    dish.
    Place pretzel crumbs on a plate.

    Rinse fish and pat dry. Dip fillets in first in flour, then mustard
    mixture,
    then pretzels to coat completely.

    Heat oil in a large heavy frying pan or electric skillet (400 degrees). Fry
    fish in hot oil until golden, turning once. Serve immediately.

    Yield: 2 - 3 servings.
