SWEET & SOUR MANGO SHRIMP WITH PASTA
(Serves 4)
1/4 cup sesame oil
24 each shrimp, peeled, cleaned, deveined
1/4 tsp. green onions, minced
1/2 tsp. ginger, fresh, chopped
1 lb. mango pasta, cooked
1 1/4 cups Sweet and Sour Mango Sauce
24 slices zucchini, grilled, hot
4 ozs. bell peppers, red and green, diced, cooked
4ozs. Maui onions, diced, cooked
4 tbsp. Chinese parsley, fresh, chopped
Season shrimp with salt and pepper. Sauté in sesame oil, in a sauté pan, until lightly browned. (Do not over cook.) Remove; keep warm. Add green onions and ginger to sauté pan; sauté for 30 seconds. Add pasta and Sweet and Sour Mango Sauce. Toss all ingredients and heat thoroughly. Place pasta in center of each of 4 plates. For each serving, place 6 slices grilled zucchini around the pasta, then top with 6 pieces sautéed shrimp. Place bell peppers and onions over the pasta. Garnish generously with Chinese parsley.
SWEET AND SOUR MANGO SAUCE
1/4 cup pineapple puree
1/4 cup mango puree
1/4 cup rice vinegar
3 tbsps. brown sugar
1/2 tsp. ginger, fresh, minced
1/2 tsp. sesame oil
2 tbsps. sherry wine
1 tbsp. soy sauce
Combine all ingredients in a sauce pot. Bring to a boil. Reduce to a simmer for 3 to 4 minutes.
