    Salmon Florentine Recipe



    2 cups cooked salmon
    4 Tbls. Butter
    ¼ cup flour
    1½ cups milk
    ½ teaspoon dry mustard
    ¼ teaspoon salt
    ¼ teaspoon Tabasco
    1½ cups grated Gruyere cheese
    2 cups cooked spinach, drained



    * Preheat oven to 425°.
    * Flake the salmon.
    * In a saucepan, melt the butter, add the flour and stir with a wire whisk until blended.
    * Bring the milk to a boil and add all at once to the butter flour mixture, stirring vigorously with the whisk until the sauce is thickened and smooth.
    * Season with dry mustard, salt and Tabasco and mix in 1 cup of the cheese.
    * Place the spinach in 4 individual greased casseroles, top with the salmon and sauce. Sprinkle with remaining cheese.
    *Bake uncovered 15 minutes.
