Sea ScallopPuff
• 4 large scallops
• Salt and pepper to taste
• 1 - 4" square puff pastry
• Clarified Butter
• 2 oz. Brie cheese
• 2 oz. heavy cream
• 1 oz. sherry wine
• Pinch of parsley
• Parmesan cheese for garnish
Recipe
Preheat oven to 400 degrees. Place puff pastry square on baking sheet. Bake approximately 10-12 minutes until done. Turn down oven to 350 degrees half way through baking. Preheat small skillet and add clarified butter. Heat to smoking point. Place scallops in pan and brown on each side until almost done. In a separate saucepan, heat Brie cheese and cream. Add sherry until thicker. Strain and reserve until later. Season with salt and pepper. Place scallops in baked puff pastry square. Place in oven to reheat. Just before serving, remove from oven, pour sauce over scallops and garnish with parmesan cheese
