    Ahi Grade 1 Tuna – 4 oz

    White Toasted Sesame Seed - .5 oz

    Black Toasted Sesame Seed – .5 oz

    Salt – 1 oz

    Vegetable Oil – 3 Tbsp



    Raspberry Soy Reduction

    Raspberry – 1 cup

    Sugar – .25 cup

    Lite Soy Sauce – 1 oz





    Sauce – Put raspberries, soy, and sugar in a saucepan, bring up to simmer. Reduce to syrup consistency. Let chill



    Mix sesame seeds together.



    In a sauté pan over med-high heat add oil; Salt the tuna on all sides. Cover one side of tuna in seed mixture. Sear all sides of tuna for 30 seconds.



    Plating: Slice tuna ¼ inch thick. On a plate put raspberry bourbon sauce down. Lay sliced tuna on top of sauce. Drizzle tuna with a little more sauce. Garnish with Tobiko caviar & pea shoots.
