    Shrimp Quesadilla Recipe

    One 10 inch Flour Tortilla
    6oz shrimp 40\50 count
    1 cup Spinach Fresh
    ¼ cup Pepper jack Cheese
    ¼ cup Cheddar Cheese
    ½ Stick Butter
    Salt and pepper to taste

    M.O.P.: Two sauté pans better to use non stick one large place on low heat and put ¼ sticks of butter in pan allow to melt. Smaller pan ¼ of stick of butter allow to heat at med heat. When butter is melted add in shrimp and sauté shrimp till cooked about 4-5 minutes. In larger sauté pan place flour tortilla shell and allow it to cook may puff up (that’s ok bubbles will reduce will flipped). Flip shell and sprinkle with cheese on half of shell. Now add in spinach back to the skillet with shrimp and sauté together add in remaining cheese and allow to melt. Transfer shrimp and spinach to one side of the shell and fold over to make a half moon shape. Allow to crisp or toast up. Place on cutting board cut in half and repeat with it quartered. Serve with a Fresh Pico or Salsa and Sour Cream.
