Shrimp Tacos
20 large shrimp
1/2 cup plus 2 Tablespoons olive oil
1 large green pepper sliced
1 large red pepper sliced
1 medium onion sliced
4 garlic cloves chopped
1/2 bunch of cilantro coarsely chopped
1 jalapeno pepper finely chopped
salt and pepper
6 large flour tortillas
Recipe
Clean and de-vein shrimp.
In a large skillet, heat 1/2 cup of oil over medium heat and saute' the green and red peppers, onions,
garlic, and cilantro.
Cook 3 minutes.
Add the shrimp and jalapenos and cook for another 3 minutes or until the shrimp are bright orange; do not
over cook. Season with salt and pepper.
In another skillet heat the 2 tablespoons of oil over medium high heat. Fry the tortillas on both sides to the
desired crispness. Drain on a paper towel.
Spoon the shrimp and pepper mixture into the fried tortillas and serve immediately.
