A delicious recipe for shrimp with a twist! by Marc Walden With Little House Bistro
For the Relish
2 ears roasted corn (shaved from cobb)
1 c diced grape tomatoes
1/4 c minced red onion
1 c diced english cucumber
2 tbls minced jalepeno
Zest and juice of 1 lime
1 tbls avocado oil or evoo
1 tbls chopped cilantro and italian parsley.
MIX
Avocado Mousse
4 ripe avocado
1/2 c cream
Salt & Pepper
1/2 lime juice
Add avocados to blender and slowly add cream
chill
Shrimp
1/2 lb of LOCAL Alabama shrimp peeled and deveined with tails intact for presentation
Sautee' or Grill and pair with mousse and corn relish
Garnish with cilantro leaves
