Shrimps in Black Bean Sauce

1 pound fresh shrimp, deveined
2 tablespoons fermented black beans, rinsed and chopped into small bits
1 slice ginger, minced
1 clove garlic, chopped
1 onion, chopped
1 red pepper, cored, seeded, and cut into thin slices
1 green pepper, cored, seeded, and cut into thin slices
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 teaspoon sugar
a few drops sesame oil
1 tablespoon cornstarch
1/4 cup water
salt to taste
Recipe
Mix together the dark soy sauce, light soy sauce, sugar, sesame oil,
cornstarch and water and set aside. Heat wok and add oil, drizzling down the
sides of the wok. When oil is ready, add the ginger and garlic and stir-fry
very briefly. Add the shrimp and stir-fry until the shrimp changes color.
Remove and set aside. Add the onions, green and red peppers, and black
beans. Stir-fry briefly.
Return the shrimp to the wok. Give the sauce a quick re-stir and add,
stirring to thicken. Bring to a boil. Add salt to taste if desired. Serve hot.
