8 oz Triggerfish Filet
8 oz Fresh Spinach
6 Artichoke Heart Quarters
2 oz White Wine
4 oz Heavy Cream
2 oz Unsalted Butter
4 oz Romano Cheese(Grated)
2 oz Feta Cheese
2 Cups Mashed Potatoes
1/4 oz Salt & Pepper
In skillet, combine cream, butter, and wine to make the sauce.
Grill the seasoned piece of Triggerfish.
Once the ingredients in the skillet have reduced, add Romano cheese, blend, then fold in Spinach and Artichokes.
On plate place mashed potatoes in center, top with Triggerfish Filet, pour cream and spinach mixture over fish and sprinkle with fresh Feta Cheese.
