Triple-Pepper Steamed Halibut
Makes 2 servings
1 tablespoon olive oil
2 cups vertically sliced yellow onion
2 garlic cloves, minced
1 cup strips red bell pepper
1 cup strips yellow bell pepper
1 cup strips orange bell pepper
Salt and freshly ground pepper
1/2 cup dry white wine
1/4 cup chopped fresh basil
1 tablespoon chopped fresh oregano or 1 teaspoon dried
2 (6-ounce) halibut fillets
Recipe
Heat oil in a large nonstick skillet over medium-high heat. Add onion, garlic, bell peppers, salt and pepper to taste and saute 20 minutes or until tender. Stir in wine, basil and oregano; cook 1 minute.
Sprinkle fish with salt and pepper; arrange fish over bell pepper mixture. Cover, reduce heat and simmer 10 minutes or until fish flakes easily when tested with a fork. Serve immediately, with peppers topping halibut.
