    Cheesy Spinach Tartlets

    1 (15oz) pkg. Pillsbury Ref. Pie crust
    1 tsp. olive oil
    4 cups packed fresh spinach
    4oz (1 cup) crumbled feta cheese
    1/2 c. ricotta cheese
    1/2 tsp. dried dill weed
    1/8 tsp. salt
    1/8 tsp. nutmeg
    dash pepper
    1 egg

    Recipe



    Heat oil in skillet over med. heat until hot. Add spinach; cook and stir 2-3 minutes or until wilted and tender. Cool slightly.
    In med. bowl, combine feta cheese, ricotta cheese, dill, salt, nutmeg pepper and egg; mix well. Stir in spinach until well mixed.
    Heat oven to 400' Unfold 1 pie crust; press out fold lines. Place crust on cutting board. With 2 1/2in. round cutter, cut 12 rounds. repeat with remaining pie crust and flour.

    Press rounds in bottom and up sides of 24 ungreased miniature muffin cups. Spoon 1 rounded tablespoon spinach mix. into each cup. Bake at 400' for 13-18 min. or until filling is set and edges are lightly brown. Cool 5 min. remove from pans.
