    Country Potato Pie

    2 large potatoes, grated
    1/2 tsp. salt
    2 tbsp. butter
    1 cup grated Swiss or Cheddar cheese
    1 medium onion, diced
    2 eggs
    1 cup milk
    2 tbsp. chopped parsley
    1/2 tsp. each of salt, pepper and dry mustard
    1 tsp. paprika

    Using 1 tbsp. of the butter, grease the bottom and sides of a 9 inch pie pan. Press in grated potatoes to form a crust. Sprinkle with cheese. Saute onion in the remainder of the butter and spread over the cheese. Beat the rest of the ingredients together then carefully pour over the crust. Bake at 375°F for 45 minutes, until the crust is golden and a knife inserted in the pie comes out clean. For easier slicing, let the pie cool for about 10 minutes.
