    Creamed Spinach

    3 pounds fresh spinach
    2 shallots, minced
    2 cloves garlic, minced
    4 tablespoons olive oil
    2 cups plain yogurt
    salt and freshly ground black pepper, to taste
    1 tablespoon fresh mint leaves, minced

    Recipe



    Wash the spinach well, trim it, and chop or tear into
    pieces, letting them fall into a large saucepan. Add the
    shallot and garlic and cook over medium heat, covered,
    for about 5 minutes. Shake the pan occasionally to prevent
    sticking. Drain spinach well, then add the olive oil and
    continue to cook for 3 minutes, stirring constantly.
    Remove from the heat, stir in the yogurt, and season with
    salt and pepper. Fold in the mint and serve immediately.

    Yield: 8 Servings
