    Eggplant Delight

    Slice eggplant
    Soak eggplant in salt water for 30 min. drain
    Salt, Pepper, and Flour on both sides

    Recipe



    Fry until brown turn and brown other side.

    Cap the eggplant with a large slice of tomato
    Dust with Basil
    Put on a cookie sheet
    Bake at 325 f for 10 to 15 min.
    Remove when tomato starts to turn color.
    Serve.

    Note: You can also top this off with mozzarella cheese just before baking
