Fried Eggplant W/ Onion
2 ea Eggplants
3 tb Butter
2 ea Onions sliced into rings
1 tb Tomato puree
3 1/2 tb Flour
1 ts Salt
1 c Sour cream
Recipe
Cut ends from eggplants, slice thinly & dip into boiling water for
10-12 secs. Season in a mixture of flour & salt then fry in hot butter on both
sides. Fry onion rings in a separate skillet in more hot butter.
Place eggplant slices on a plate & cover with onion rings.
Mix tomato puree with sour cream & put it in same pan used to cook
eggplant & bring to a boil.
Pour over eggplant & onions then serve.
Yield: 6 Servings
