Fried Eggplant & Onions w/ Sour Cream Sauce from David
Yield: 6 Servings
2 ea Eggplants
2 ea Onions sliced in rings
2 tb Flour
4 tb Butter
1 c Sour cream
1 tb Tomato paste
Salt & pepper to taste
Recipe
After cutting ends off of the eggplant, scald it in boiling water,
slice Into quarters, slice again into thin slices, roll in the flour,
& fry in 2 tb of butter. Fry the onion rings in separate skillet in
the remaining butter until they are beginning to brown.
Place eggplant & onion rings on a platter alternately & pour sauce
over them.
SAUCE:
In skillet in which eggplant was cooked mix tomato paste, salt,
pepper & sour cream.
