Grilled Vegetable Quesadillas
4oz (total) of Cheddar and Feta cheese, shredded
1 cup of corn
2 tablespoons of mayonnaise
2 scallions, sliced
¼ cup tomato, chopped
¼ cup green peppers, chopped
1T chipotle chiles in adobo, chopped
4-6 Flour tortillas
1 Tablespoon of olive oil
Directions:
Stir together cheese, corn, mayonnaise, scallions, tomatoes, green peppers, and chiles in a small bowl. Lightly brush one tortilla with small amount of olive oil. Turn tortilla over and spread about ½ cup filling over half, then fold other half over.
Heat lightly oiled pan over moderate heat until hot.
Substitutions for lower fat: Use mozzarella in place of cheddar and low fat mayonnaise.
For added whole grains: Use whole wheat tortillas instead of flour tortillas.
