    Healthy Roasted Indian Squash on Wilted

    vegetable cooking spray
    2 whole butternut squash, seeded and cubed
    2 cups chicken stock
    2 Granny Smith apples, cored and cubed
    1/2 teaspoon ground nutmeg
    1 teaspoon ground cumin
    4 cups frisse, arugula, chicory, turnip, etc.
    2 teaspoons cracked black pepper
    1 teaspoon salt
    2 tablespoons brown sugar

    Recipe



    Spray a sauté pan with vegetable cooking spray. Sauté the squash briefly then add the stock. Cover and allow to steam for 15 minutes. Add the apple, nutmeg, and cumin. Cover and allow to steam for another three minutes. Add the greens and allow them to briefly wilt. Place the greens on a platter. Season the squash and apples with salt, pepper, and sugar. Serve on top of the greens.
