    Heart-Healthy Shrimp Stuffed ‘Shrooms

    1 pound fresh, extra-large mushrooms, washed thoroughly and stems removed and reserved
    1 can of baby deveined shrimp, drained and rinsed
    1 leek
    1/4 cup nonfat cottage cheese
    1 tspn. Dijon mustard
    1 egg white
    1 tsp. paprika

    Recipe



    Blanch the mushrooms in boiling water for about 2 minutes. Remove from the water and drain, stem-side down, set aside. Chop reserved stems finely. Remove tough green leaves from the leek, trim the root end and slice the leek in half lengthwise. Rinse well to remove any grit from between the layers and mince finely. In a small bowl, mix the shrimp, mushrooms stems, leeks, cottage cheese, mustard and paprika. In another small bowl, beat the egg white until stiff peaks form. Fold into the cottage cheese mixture. Spoon the filling into the mushroom caps. Sprinkle with paprika. Bake at 400 degrees F for 20 minutes, or until filling is set. Serve immediately.
