    January Sweet Potatoes

    6 medium sweet potatoes
    1/2 cup softened butter
    1/4 cup chopped almonds, toasted
    1 tablespoon grated orange peel
    2 tablespoons maple syrup
    1/2 teaspoon vanilla extract
    1/2 teaspoon ground cinnamon
    Parsley (optional)

    Wash and dry sweet potatoes. Bake at 425 F. for 40 minutes or until tender. Cut a lengthwise slice from top of each potato; remove skin and place meat of sweet potato in a medium-sized mixing bowl. Gently scoop out sweet potatoes, leaving 1/4-inch shell; place in bowl. Add all remaining ingredients to bowl; blend well.
    Spoon mixture into reserved shells. Arrange on a baking sheet. Bake, uncovered, for 15 minutes or until browned. If desired, garnish with parsley.

    Serves 6
