    Koosa aka Stuffed Zucchini

    ½ cup minced onion
    1 Tbsp olive oil
    8 medium sized zucchini
    ½ lb ground beef
    ¼ cup chopped pecan
    ¼ cup golden raisins
    ¾ cup precooked brown rice
    6 oz can tomato paste
    ¼ tsp nutmeg
    1½ tsp salt
    8 oz can tomato sauce
    ¾ cup water

    Preheat oven to 350.

    Saute the onion and olive oil over medium heat until onions are translucent. Set aside

    Trim the stem end off of the zucchini then cut in half across the "waistline." Using an apple corer, hollow out the inside of each zucchini, taking care not to poke a hole through the opposite side. Set the insides aside for another dish.

    Combine beef, onions, pecans, rice, raisins, salt, nutmeg and 1/2 of the tomato paste. Mix well.

    Fill the inside of each zucchini with the ground beef mixture and place in a casserole pan.

    Mix remaining tomato paste, tomato sauce and water until combined. Pour the tomato mixture over the top of the stuffed zucchini and bake for 45 minutes to an hour, or until the ground beef is cooked through.

    Variations:
    -For larger zucchini, cut the zucchini in half lengthwise and scoop out the insides. Fill with stuffing and bake according to the directions until stuffing is done.
    - Yellow crookneck squash can be substituted for zucchini
