    MUSHROOM CIABATTA

    1 medium Ciabatta bread or half French baguette
    1 box cap mushrooms thinly sliced
    1 medium onion, thinly sliced
    2 Tbs butter
    1 Tbs olive oil
    Freshly ground pepper
    1/4 cup grated mozzarella (room temperature)

    Recipe



    If the bread isn't fresh then cut open and toast in oven on 200 C for five minutes, until top looks slightly golden, not burnt.

    - With fresh or not so fresh bread, cut in half lengthwise, and separate both halves. Place each side of bread on serving plate with salad. Set aside.

    - In a large frying pan, place butter and oil. Heat until butter is melted.
    - Add onions. Stir and cook until onions are transparent.
    - Add mushrooms, stir. Keep onions and mushrooms moving until the mushrooms are well moistened, and some begin to look toasted.
    - Add pepper to taste.
    - Place half the mixture on each slice of bread. Sprinkle each with half the cheese. Serve with gusto.

    This recipe can easily be doubled, so don't worry about feeding the in-laws.
