    Marinated Green Beans

    Marinade
    1/2 cup strong olive oil
    Juice of about 2 lemons. You want to start with about 1/3 as much
    juice to oil.
    1+ Tablespoons Frank's Red Hot Sauce or something similar.
    3-4 cloves garlic, chopped. Plus maybe 1/4 tsp of onion powder and a pinch of Accent.

    Shake it together in a jar. Add salt and pepper to taste and more juice or sauce if you feel it needs it. This is best if it sits overnight, but you can make it and fridge it before you start the water boiling if those green beans at the market were just screaming your name.

    Marinated Green Beans and Tomatoes:
    Stem a pound of green beans. You can cut them up to make them easier to eat. Simmer them in salted water while you cut a pint of grape tomatoes in half.
    When the beans are just crisp-tender dunk them in ice water and drain them well ASAP.
    Mix them with the dressing and the tomatoes. Cover the bowl and leave it in the fridge two or three hours, tossing occasionally. This is a good pot luck dish for a picnic.

    The dressing is also nice on a potato and egg salad. With scallions and some roasted red pepper strips and olives. You will need less garlic in there for this. Maybe 2 cloves. You could add some herbs de province to the dressing before you refrigerate it, but that's really not necessary. It's good though.
