Mexican Cabbage
2 tablespoons oil
4-5 potatoes, scrubbed and cut into bite size pieces
1 large onion, chopped
2 cloves garlic, minced
1 medium head of cabbage, chopped
2- 14 ½ oz cans chicken stock
1- 10 oz can diced tomatoes with green chilies (Rotel)
1-14 oz can diced tomatoes
1 chipotle pepper in adobe sauce
salt and fresh cracked pepper
Recipe
Heat oil in large saucepan or Dutch oven. Add potatoes, onion and garlic.
Cook until onions are translucent and potatoes are just beginning to get tender. Add remaining ingredients and simmer until cabbage is tender.
NOTE: If you don't do spicy foods, use 2 cans of tomatoes and omit the Rotel and don't go anywhere near the chipotle pepper.
