Potato Patties
4 medium potatoes, peeled & shredded
1 small onion, finely chopped
1 egg, beaten
1 tablespoon all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon red pepper
Vegetable oil
Recipe
Squeeze the potatoes between paper towels to remove excess moisture. In
a bowl combine all of the ingredients except for the oil. Mix well. In a
large skillet, heat 1/8-inch oil to 375-degrees. Drop by 1/4-cup of
mixture at a time into the hot oil; pressing the mixture into 3-inch
rounds with the back of a fork. Fry until golden brown, turning once
during the cooking process. Drain well on paper toweling. Serves: 6.
