Potatoes with Lemon
2 pounds baking potatoes, cut into 2 inch cubes
Boiling salted water
1 teaspoon grated lemon rind
1/4 cup melted butter
1/4 cup chopped parsley
3 tablespoons chopped chives or scallions, including green part
1/4 teaspoon nutmeg
Salt and freshly ground black pepper to taste
1/4 cup lemon juice
Recipe
Preheat the oven to 450 degrees. Cover the potato pieces with boiling salted water. Bring to a boil and simmer four minutes. Drain. Toss potatoes with the lemon rind, butter, parsley, chives or scallions, nutmeg, salt and pepper. Turn into a greased casserole and bake 25 minutes, or until potatoes are tender. Pour the lemon juice over all. Yields 6 servings.
