Recipe Introduction
People have been freezing food in artic regions since pre-historic times - and weren't
they smart! We now know that freezing is safer than any other form of food preservation
since bacteria can't grow on frozen food. This industry grew rapidly during the
20th century because it saved people time (and storage space) in their kitchens.
An added benefit is that frozen food loses less flavor and vitamins than other methods
during processing.

FROZEN SPINACH PIE
Frozen spinach can contain 4 times more vitamin C than fresh.
1 box (12-oz) frozen, chopped spinach
1/4 cup chopped onion
2 eggs, well beaten
2 Tbs grated Parmesan cheese
1 cup milk
1/2 teaspoon salt
1/3 cup chopped celery
1/2 teaspoon ground nutmeg
Recipe
1) Thaw frozen spinach and press out liquid.
2) Mix remaining ingredients together, fold in spinach, and pour into a greased
9 inch pie pan.
3) Bake at 375 degrees F for 45 minutes (or until a knife inserted in the middle
comes out clean). Cut into wedges and serve warm.
