Saint David is the patron saint of Wales. He was recognized as a Catholic saint in 1120. After the Protestant Reformation, his birthday, March 1, was made into a national festival. It is celebrated by schools and cultural societies throughout Wales. It's the custom to wear a leek or a daffodil - two of their national emblems.

Creamed Leeks with Pimiento
For a colorful, flavorful dish to serve on St. David's Day on March 1, try either this recipe or a tureen filled with delicious cream of leek soup made with a packaged dry soup mix. St. David is the patron saint of Wales.
Remove roots and tops of leeks, leaving about 6 inches of green stalk; wash and slice. Soak 15 minutes in cold water. Cook 8 minutes in boiling salted water; drain. Chop pimiento; add with leeks to white sauce. Heat over hot water.
Makes 6 servings.
