Rhubarb Fritters

1 cup all-purpose flour
1 cup plus 1 tablespoon sugar
1/2 teaspoon salt
2 eggs separated
1/2 cup milk
1 tablespoon melted butter
2 cups finely chopped rhubarb
Oil for deep frying
Confectioners sugar
Recipe
In a medium bowl combine flour, 1 cup sugar, salt. In another bowl, whisk egg yolks, milk and butter. Gradually add this mixture to the dry ingredients, stirring until smooth. Toss in remaining sugar; gently stir into batter. In a mixing bowl, beat egg whites until stiff, fold into batter, add rhubarb, mix well. In an electric skillet or deep fryer, heat oil to 375 degrees. Drop batter by tablespoon into oil. Fry a few at a time, turning with a slotted spoon until golden brown. Drain on paper towels. Dust with confectioners sugar, serve warm.
Makes about 2 dozen or 6 servings.
