    2 large Idaho potatoes,
    scrubbed
    4 strips bacon, diced
    1/4 c. chopped green onion
    1/2 c. sour cream
    1 Tbsp. grated Parmesan cheese
    (may use less or more)
    1/2 tsp. salt
    1/2 tsp. white pepper



    Recipe



    Bake potatoes in 400 degrees oven for 1 hour. While potatoes
    are cooling slightly, fry bacon until crisp. Drain off excess
    drippings, leaving 3 tablespoons in skillet. Add the onion and
    saute slowly. Remove the skillet from heat. Cut shallow
    lengthwise slice from each potato and carefully spoon out
    inside. Mix with rest of ingredients and beat with Mix Master.

    Fold in the bacon and onion and as much of the bacon drippings
    as you need to get the right consistency of the potatoes.

    Stuff mixture into potatoes, drizzle with butter and sprinkle
    paprika over the potatoes. Bake at 350 degrees or keep and bake until
    heated through. This makes 2 servings, but you can half, then
    stuff potatoes to get 4 servings.

    These are very special and worth the trouble. When
    baking a large number. Bake 1 1/2 hours.
