    Scalloped Cabbage

    1 tablespoon butter for buttering the casserole dish
    1 medium head of green cabbage, cut into
    small wedges
    2 tablespoons butter
    2 tablespoons all-purpose flour
    1/2 teaspoon salt
    1 cup milk
    1/2 tablespoon dry mustard
    1/2 teaspoon black pepper
    2/3 cup shredded Cheddar cheese
    1/2 cup crushed buttery round crackers or toasted bread crumbs

    Preheat oven to 350 degrees. Butter a two-quart casserole dish. Bring a large pot of salted water to a boil. Cook cabbage in boiling water until barely tender, about 10 minutes; drain well.
    While cabbage drains, melt butter in a small saucepan. Blend in flour and cook for about three to four minutes. Add in the milk, dry mustard, pepper and salt and bring to a boil, stirring all the while. After the milk has thickened, remove from the heat and let cool for a few minutes. Slowly add in the cheese a little at a time.
    Transfer cabbage into the buttered casserole dish and stir in cheese sauce. Sprinkle crumbs on top.
    Bake for 25 to 30 minutes or until top is browned.
