    Smothered Summer Squash

    6 to 8 young tender yellow summer squash
    1 med onion sliced thinly
    4 tbsp butter
    ½ to ¾ cup sour cream
    Lawry's seasoning salt
    Parmesan cheese
    4 – 6 slices cooked bacon crumbled

    Slice squash in ¼ inch slices
    Slice onions in 1/8 inch slices
    Melt butter in large sauté pan or med. Frying pan.
    Season squash and onions with Lawry's seasoning salt and cook
    together in the butter until squash are soft and the onions are soft
    and slightly caramelized.
    Remove from heat and pour off all the liquid from the pan and
    immediately stir in the sour cream and mix well sprinkle the
    crumbled bacon on that, then cover the top of the mixture with a
    good coating of parmesan cheese. Cover the pan with a lid and let
    set for about 5 minutes on a warm burner without stirring so the
    parmesan melts Serve hot from the pan.
