    You will need a big mess of greens, turnip, collard, mustard, kale etc. or in any
    combination. Remove the stems and discard them.

    List of Ingredients




    Southern Country Greens




    1 medium onions, finely diced
    A couple of jalapenos, seeds removed and chopped fine
    A couple of chunks of fat back, slab bacon or smoked ham hocks
    1 tablespoon white granulated sugar

    2 tablespoons white vinegar.

    Lawry's seasoning salt and ground black pepper

    Tear greens into large pieces. Wash the greens well in a sink full of cold water.
    Take the greens out of the sink and transfer to a large bowl, letting the grit to
    fall to the bottom of the sink. Be sure you get all the grit out of the greens.
    If necessary, wash again. Don't drain the greens in a colander. This will trap the
    grit in the leaves of the greens.
    Fill a med large pot about 1/2 full with water and add all the ingredients except
    the greens.

    Bring to a boil over high heat. Gradually stir in the greens a couple of handfuls
    at a time allowing each batch to wilt before adding more greens.

    Season with Lawry's salt and pepper to taste.
    Cover and reduce the heat to medium low. Cook the greens, stirring occasionally,
    just until they are tender, about 30 minutes. Don't overcook the greens or they
    will lose their color and fresh flavor.
    Serve hot with hot cornbread and a good clear pepper sauce.
