Stewed Tomatoes
1/4 ea sweet type onion peeled chopped
1 Tb chopped celery
1 Tb butter
4 c peeled tomatoes
1 Tb Sweet paprika
1/3 c tomato juice or water
6 Tb Splenda
1/2 ts dried basil
Salt to taste
Recipe
Melt butter in a saucepan.
Saute' onion & celery over med-heat until onion is translucent.
Do not brown.
Place tomatoes in a small boiler, bring to a boil & cook at
a slow boil for 6-8 mins.
Add onion & celery mixture.
Add Splenda.
Then cook over med-low heat 5-7 mins.
Place Cornstarch in a cup.
Stir chilled tomato juice in cup. Dissolve al lumps.
When tomatoes are cooked, add cornstarch mixture to them.
Stir it in quickly & well until a glossy sauce is formed.
Add basil & adjust seasonings to taste.
Serve hot as a side dish.
Yield: 6 servings `
