Turnip Greens
2 lbs. fresh Turnips Greens
3 c spring Water
1/2 t canning Salt
1/2 c Onion, chopped
2 t fresh churned Butter
1/8 t ground Allspice
1 T all-purpose Flour
1 t local hive Honey
2 T apple cider Vinegar
Recipe
Combine first 3 ingredients in a large Dutch oven; bring to a
boil. Reduce heat; simmer 1 hour or until tender. Drain greens,
reserving 1 cup of liquid; set aside. Sauté onion in butter in a
nonstick skillet. Add sautéed onion and allspice to drained greens.
Stir flour and sugar into vinegar, stirring to dissolve; add to
reserved 1 cup of liquid. Add flour mixture to greens. Cook over
medium heat until thickened, stirring occasionally.
Serves 6.
