    Zucchini Casserole with Sour Cream

    3 medium sized zucchini, cut into small pieces
    1/4 cup sour
    1 Tablespoon butter
    1 tablespoon grated cheese
    1/2 teaspoon salt
    1/8 teaspoon paprika
    1 beaten egg yoke
    1 Tablespoon chopped chives
    Toppings:
    Bread crumbs
    Butter
    Grated cheese

    Simmer zucchini, covered, until tender, for about 6-8 minutes in a small
    amount of boiling water. Shake the pan to keep them from sticking. Drain them well.

    Combine sour cream, butter, grated cheese, salt and paprika. Stir this mixture over low heat until the cheese is melted. Remove from heat. Stir in egg yolk and chives.

    Add the zucchini. Place the mixture in a baking dish. Cover the top with
    bread crumbs. Dot the top with butter. Sprinkle with grated cheese.

    Bake in moderate (300 degree) oven until browned, about 20 to 30 minutes.
