    This is great all summer long since all the ingredients are fresh and readily available. Enjoy!

    List of Ingredients




    2 large zucchini sliced
    1 large onion sliced
    2 or 3 nice sized potatoes diced (the amount depending on how much you like potatoes)
    3 plum tomatoes (fresh or canned), hand crushed
    salt and pepper to taste
    fresh basil
    fresh parsley
    olive oil
    A chunk of parmesan cheese



    Recipe



    Layer the potatoes, onions, zucchini, tomatoes, herbs, season with salt and pepper, drizzle olive oil and drop the chunk of cheese all in a large pot. Let it all cook down slowly till the potatoes are soft. Add some water if necessary, but chances are that you may not need it since there is water in the zucchini as well as the tomatoes.

    This is good, hot, cold, warm or even better on the next day. Serve it with a nice crusty Italian bread for dipping. Top with grated cheese.
