    Zucchini Crunch

    8 cups zucchini, sliced
    1 cup sugar
    2/3 cup lemon juice
    1 tsp. cinnamon
    4 cups flour
    2 cups sugar
    3 sticks butter

    Cook zucchini, sugar, lemon juice, cinnamon until tender. Blend flour, sugar, butter like pie dough. Put half of flour mixture in 9x13" pan, bake at 350 for 10 minutes. Put zucchini mixture on top of baked flour mixture base. Top with remaining flour mixture, bake 45 minutes at 350. It tastes just like apples.
