A simple, quick and very tasty Italian meal

Serves 6
350 g/12oz pasta
55 ml/4tbsp olive oil
1 bunch of spring onions, chopped
1 clove garlic
Salt and pepper
225 g/8oz cherry tomatoes, quartered
150 g/5oz cheese, diced
55 g/2oz grated Parmesan cheese
1 bunch of basil
12 stoned black olives, halved
Recipe
Cook pasta in a large pan of boiling salted water as directed on packet, until just tender.
Meanwhile, heat olive oil in a small saucepan. Add spring onions and cook, stirring
occasionally, 2 or 3 minutes. Add garlic and cook 2 minutes. Drain pasta and return to
saucepan.
Add spring onion mixture, salt and pepper. Add tomatoes to pasta and stir over low heat, to
warm through. Stir in cheeses.
Coarsely tear* basil leaves in halves or thirds, add to pasta with olives and serve
immediately.
*tearing basil leaves gives better flavor than chopping.
