Chicken and Broccoli Lasagna
Sauce:
4 tbls. butter
4 tbls. flour
2 cups milk
1 cup chicken broth
3 eggs
1/2 cup parmesan cheese
1/8 tsp. nutmeg
salt and pepper to taste
Lasagna:
1 pkg. lasagna noodles, cooked
1 medium onion, chopped
1 clove garlic, minced
1 1/2 cup diced chicken breasts
1 bag frozen broccoli cuts
1 pound mozzarella cheese, shredded
1/4 cup parmesan cheese
Sauce:
Recipe
Melt butter, stir in flour. Add milk and whisk until smooth. Cook stirring constantly
until thick. Beat eggs in a separate bowl. Add a small amount of the sauce to the eggs to
temper them so they will not cook in the sauce. Slowly add the eggs to the sauce, stirring
continually. Add cheese and rest of ingredients.
Sauté chicken with onions and garlic. Stir in broccoli and cook until tender. Add seasonings.
Layer a greased, 9x13 as follows: sauce, mozzarella, noodles, chicken. Repeat, finishing with
cheese. Bake at 350 degrees for 30 minutes.
